Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon alcohol free almond extract
  • 1 teaspoon alcohol free vanilla extract
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 cup sliced almonds, toasted

For the Vanilla Glaze:

  • 2 cups powdered sugar
  • 3-4 tablespoons milk
  • 1 teaspoon alcohol free vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C). Grease a 10-inch Bundt pan with butter or non-stick cooking spray.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the alcohol free almond extract, alcohol free vanilla extract, and salt.
  3. In a separate bowl, whisk together the flour and baking powder. Alternate adding the flour mixture and milk to the butter mixture, mixing just until combined after each addition.
  4. Gently fold in 3/4 cup of the toasted almond slices.
  5. Pour the batter into the prepared Bundt pan and bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  7. To make the vanilla glaze, whisk together the powdered sugar, 3 tablespoons of milk, and the alcohol free vanilla extract until smooth. Add an additional 1 tablespoon of milk if the glaze is too thick.
  8. Pour the vanilla glaze over the top of the cooled cake, allowing it to drip down the sides.
  9. Sprinkle the remaining 1/4 cup of toasted almond slices over the top of the glazed cake.
